Purple Yam Cursor

Our Vegetable cursor features a yam, a starchy root vegetable often mistaken for sweet potatoes. Yam is the common name for some species in the genus Dioscorea, native to Africa, Asia, and the Americas. They have rough, scaly skin that ranges in color from pale yellow to dark brown and flesh that can be white, orange, purple, or pink. They are traditionally eaten in stews, soups, and porridge. They are a good source of dietary fiber, potassium, and vitamins B and C. They are also low in fat and sodium and have a low glycemic index, making them a good choice for people with diabetes.
